Chapssaltteok is one popular Korean dessert akin to Japanese mocchi. It is made from sweet rice flour and red bean paste. Chapssaltteok is a chewy dessert beloved by children, and a great choice when serving guests. If you’re looking for something interesting to satisfy your sweet tooth, give this delicious recipe a try.
- 1 cup sweet rice flour
- ½ teaspoon salt
- 3 ½ tablespoon sugar
- 1 cup water
- ¾ cup red bean paste
Combine 1 cup of sweet rice flour, 3 ½ tablespoons of sugar and ½ teaspoon of salt into a bowl. Stir well. Gradually add 1 cup of water, stirring until all the ingredients are well blended into a creamy texture. Cover the bowl with plastic wrap and microwave on high for 3 minutes. Take it out and stir it again until you have a thick, doughy texture. If the dough is too loose or too thick you may need to adjust the amount of time in the microwave.
Next, using a spoon and your hands divide the ¾ cup of red bean paste into 8 ping-pong sized balls. Cover a cutting board or piece of parchment paper in cornstarch and roll the dough into a 16 inch long loaf. Then, cut the dough into eight 2-inch section. Flatten each section and place the red bean balls into the center of each. Wrap the ball with the rice dough and roll it over until you have a consistently smooth shape. Finally, sprinkle some cornstarch on top.
